i promised to share a couple of recipes that we did recently...pork loin in the crock pot and pumpkin pancakes that michelle made the other night...they were so good...i was really not prepared to like them...but i did:
Pork Loin in Crock Pot

2 1/2 to 3 lb. pork loin
1/2 pkg. lipton onion soup mix
1 pork gravy mix
1 cup water
I line my crock with a reynolds crock pot liner bag, because i am lazy...place pork loin in crock pot sprinkle with lipton onion soup mix and the pork gravy mix ...pour over water...place lid on crock pot...cook on high 1 1/2 hours ...turn down to low and cook for 3-4 hours...till fork tender...remove pork loin...mix about 1 tbsp. corn starch with 3/4 cup milk...mix or shake...pour into crock pot ...turn up to high..put pork back in and in about 15 mins. your gravy should thicken...i love doing it this way...remove pork slice and serve...i always have some leftovers and usually shred it and add bbq sauce and serve for lunch the next day on a toasted bun.
Pumpkin Pancakes or Waffles
1 1/2 cups pure canned pumpkin
2 1/4 cups flour
1 tsp baking powder
1/2 baking soda
1 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
1/2 cup packed brown sugar
2 large eggs, separated
1/4 cup plain greek yogurt
1 cup whole or skim milk
4 tbsp butter or margarine, melted
Whisk the flour, baking powder,baking soda,salt,cinnamon, and nutmeg in a bowl. Whisk the sugar and egg yolks in a separate bowl, then whisk in 1 1/2 cups pumpkin, the yogurt and milk. Whisk in the melted butter. Pour the pumpkin mixture into the flour mixture and stir with a rubber spatula until just combined (it will be lumpy). Beat the egg whites with a mixer until stiff. then gently fold into the batter.
For Waffles;Preheat waffle iron and lightly grease it. Spoon batter and cook until golden brown.
For pancakes; Heat pan or griddle, lightly grease it. Put a small tablespoonful in at a time, and spread it around a little or else it will be too thick. When you see bubbles form, then you're ready to flip. Cook until golden brown. Can also be made smaller into "silver dollar" pancakes.
